PUMPKIN
COFFEE CAKE
Serves 12
1/2 cup butter
3/4 cup sugar
1 1/4 tsps vanilla extract
3 eggs
2 cups all-purpose flour
1 tsp each, baking powder and soda
1/2 cup sour cream
1 3/4 cup solid-pack pumpkin
1 egg, slightly beaten
1/3 cup sugar
1 1/2 tsps pumpkin pie spice
streusel
Cream butter, 3/4 cup sugar and vanilla. Add eggs and beat well.
Combine dry ingredients, add to butter mixture alternately with
sour cream. In another bowl, combine pumpkin, beaten egg, 1/3
cup sugar and pie spice. Spoon half of the batter into a 13"x9"
baking pan, spread half of the pumpkin mixture and then half of
the streusel. Repeat layers, ending with streusel on top. Bake at
325 degrees for 50 to 60 minute, or until tested done in middle.
STREUSEL
1 cup brown sugar
1/3 cup butter
2 tsps cinnamon
1 cup chopped nuts
Mix together well.

Feature – Focus on Holiday Decorating
Holiday decorating is
usually centered around themes for presenting the family feast. Here's
an idea for your dining table. You bought all those cute little tiny pumpkins
for Halloween, but NOW what do you do with them?? Why not turn them into
the Thanksgiving centerpiece! Just cut a hole into the pumpkin with a
knife, then carve out room for a tapered candle. You could even do this
with other fruits, such as apples, pears, oranges, and star fruit. The
height of various fruit would make an interesting candle arrangement.

As the holiday season is coming up fast (it seems to come faster every year!),
what can I do about those gravy stains that seem to appear after our
Thanksgiving dinner?
A. Thanksgiving dinner - turkey,
gravy, sweet potatoes - and that 'oops' sound as someone apologizes for
spilling the gravy on the tablecloth. Remember, before attempting any
stain removal, first test the article for colorfastness. Gravy stains, as well
as eggnog, are protein stains and should be treated the same way. First, blot
the stain with cold water and a mild detergent. If the stain remains,
take a small amount of detergent and mix with regular household ammonia (the
non-sudsing type) to form a paste and apply to the stained area. Let
stand for five to ten minutes, then launder as usual. If the stain
remains, use an enzyme presoak or a detergent that contains enzymes and follow
the manufacturer's instructions. And enjoy your leftovers!
